Pizza or Tacos? Tough decision...why not BOTH?!

The methods for making pizza, corn tortilla and flour tortilla doughs is so simple, you don't need a recipe! You need a ratio of ingredients, a method, clean hands and about 30 minutes.


I'll give you the ratio of ingredients below. Round them all up along with your pizza sauce, salsas and toppings, and I'll walk you through the rest!

To infuse or not to infuse?

The choice is yours; the recipe will yield the same results either way; simply exchange the method of infusion, for the uninfused version. For example, use regular butter where you see infused butter. (It IS 4/20 though...)

Equipment and Supplies

Pizza Dough

3 cups flour (All purpose or bread flour. I'll be using bread flour)

1 cup warm water

1 Tablespoon Instant Yeast (I use Red Star Quick Rise*)

1 Tablespoon Infused Oil

1 Tablespoon Ground Cannabis Flower

1 Tablespoon Sugar or Honey

1 Teaspoon Salt


*A note about yeast: You can use the same amount of Active Yeast if Instant/Rapid or Quick Rise is unavailable, however, you will need to prep your yeast before adding it to the dry ingredients. To do this, add the yeast and sugar or honey to 110 degree water, stir and let sit for at least 5 minutes. The mixture will foam on the surface as the yeast activates. Quick rise versions of yeast can be added directly to dry ingredients. I do not recommend products such as Fleischmann's Pizza Yeast, because it contains L-Cysteine, a dough conditioned used in most commercial baking that comes from dissolving feathers and human hair in acid.

Rolling Pin (optional)

Baking Sheet

Parchment paper (recommended)

1 Extra Tablespoon Flour or Semolina Flour for dusting

Oven set to 475 degrees

Tacos!

Whether you're Team Corn or Team Flour tortilla doesn't matter to me! I love them BOTH!

Corn Tortillas

2 cups Masa Harina Flour (finely ground corn flour)

2 cups HOT water

Salt


Because there are so few ingredients I recommend infusing your toppings instead of the tortillas. Though if you want to add ground cannabis flower to them, I'm all for it.

Flour Tortillas

The only ingredient you'll need to make these, that you may not already have, is Shortening or Lard. Either works.

Medium bowl (x2 if making both)

Measuring Cups and Spoons

Skillet (Cast iron works great!)

Parchment Paper

Plastic wrap or Ziploc baggies

Paper towels

Oil (for cooking tortillas)
